Sweet Potato O'Henry, Ipomoea batatas 'O'Henry', is smooth and stringless with the rich flavor of nuts and honey. It has a different look from the other darker-skin varieties because it has a golden flesh that is sweet and aromatic. O’Henry is slightly drier than other sweet potatoes and makes a great baked potato and ideal for soups and stews. O’Henry is a high-yielding plant that produces huge cream-colored tubers in a compact cluster underneath the plant for easy digging; 90-100 days to maturity. This is a good storage potato. Plant sweet potatoes 2 weeks after the last frost date in your area, when the air and soil temperatures are 65°F or higher. They should be spaced 3-6 feet since the spread is 6-12 feet and planted 2 inches deep. O’Henry requires full sun and should be fertilized prior to planting and 3-4 weeks after. Grow sweet potatoes in rich fertile, light sandy well drained soil. Sweet potatoes are related to the morning glory and grow on trailing vines that quickly cover the soil.
